I am really into meal prepping lately and I love Rens’ book! In today’s blogpost I want to share my version of this Chocolate Banana bread recipe with you.
This Chocolate Banana bread only takes 15 minutes to prepare. It is a perfect snack but you can also have a slice at breakfast. Yum!
The ingredients I used:
- 3 bananas
- 4 tablespoons cacoa powder
- 3 tablespoons of soaked Chia seeds
- 120 millilitre coconut milk
- 120 millilitre coconut oil or olive oil
- 2 teaspoons of cinnamon powder
- 5 or 6 medjool dates
- 1 teaspoon of salt
- 1 pouch Dr. Oetker Backin baking powder
Actually you need a straight bread loaf/cake pan for this, but I used a springform pan. Any cake pan will do, I think. Your banana bread will taste the same, haha. Don’t forget to grease your cake pan.
Mix the bananas, coconout milk, coconut oil and medjool dates in your blender, blend until creamy. Put the other ingredients in a large mixing bowl and add the creamy mix. Stir until well blended.
Put the mix in the cake pan en put it in the oven at 180 °C and leave it for 45-50 minutes.
When it’s done you have a delicious and healthy snack for on the go! Happy prepping!
